The evening opens with Spicy Tuna Poke, bright and delicate, balanced perfectly by the crisp minerality of Meinklang Grüner Veltliner (White).
A second starter, Spiced Golden Beet Salad, brings warmth and earthy sweetness, paired with Fidora IGT Rosso (Red) — a gentle, organic wine that rounds the dish beautifully.
Next comes Duck & Pork Dumplings, wrapped soft and rich in flavour, served with Orsogna Ramoro Pinot Grigio (Skin-Contact Rosé). The subtle tannins and rose-hued texture add lift to the dish’s savory depth.
The heart of the evening — Lamb Birria Tacos — layered with spice, smoke, and slow-braised tenderness. This course finds harmony in two pairings: Cirelli Trebbiano (Skin-Contact, Italy) for brightness and Le Croiziollon Cahors (Red, France) for body and earth.
To close the night: Thai Tea Crème Brûlée, smooth and aromatic, a nod to familiar comfort with a refined twist. Served alongside Viberti Moscato (Italy) — fragrant, lightly sweet, and the perfect final note.
